Traditional Shakkarpara Recipe with Desi Ghee & Shakkar

Shakkarpara is a traditional crispy snack enjoyed with tea across Pakistan and South Asia.
This version uses Grans Desi Shakkar instead of refined white sugar, giving the Shakkarpara a richer, more traditional sweetness. Grans Cow Desi Ghee adds flavour and helps create a crisp, crumbly texture.
Ingredients
- ½ cup Grans Cow Desi Ghee
- ½ cup milk
- ½ cup Grans Desi Shakkar
- 3 cups all-purpose flour
- 2 tablespoons semolina (suji)
- 1 pinch salt
- Oil for deep frying
How to Make Shakkarpara
1. Prepare the Ghee and Milk
Add the Desi Ghee and milk to a saucepan and warm gently over low heat.
Do not bring it to a boil.
Remove from the heat and transfer the mixture to a mixing bowl.
2. Add Desi Shakkar
Add the Desi Shakkar while the mixture is still warm and stir well.
Allow the mixture to cool slightly before adding the dry ingredients.
3. Mix the Dry Ingredients
In a separate bowl, combine:
- All-purpose flour
- Semolina
- Salt
Mix evenly.
4. Make the Dough
Gradually add the flour mixture to the Ghee, milk and Shakkar mixture.
Mix and knead until you have a smooth, medium-firm dough.
Avoid making the dough too soft, as this can affect the texture during frying.
5. Rest the Dough
Cover the dough and let it rest for approximately 30 minutes.
This makes it easier to roll and shape.
6. Roll and Cut
Roll the dough on a clean surface to your preferred thickness.
Using a knife or pizza cutter, cut it into traditional diamond-shaped pieces.
Try to keep the pieces similar in size so they cook evenly.
7. Deep Fry
Heat oil over medium heat.
Fry the Shakkarpara in batches until they become golden and crisp.
Avoid overcrowding the pan.
8. Cool and Serve
Remove from the oil and place on absorbent paper.
Allow the Shakkarpara to cool slightly before serving.
Enjoy with tea, kehwa or your favourite hot drink.
Tips for Crispy Shakkarpara
- Keep the dough medium-firm rather than very soft.
- Allow the dough to rest before rolling.
- Fry over medium heat so the pieces cook through without browning too quickly.
- Cut the pieces evenly for consistent cooking.
- Allow them to cool before storing, as they become crispier as they cool.
